Many amateur and professional chefs are impressed with Wusthof Santoku knife because it chops and dices cleanly and quickly and it effortlessly cleaves peppers neatly in two. It’s light and well-balanced, and while not quite as all-around versatile, is much better suited to chopping operations than the chef’s knife. The hollow-edged Santoku reduces sticking of food when chopped though it doesn’t completely eliminate it. This knife combines several ideas which make slicing vegetables into pieces precise. This precious knife isn’t intended to chop through bones or frozen foods although it looks similar to the Cleaver. Its high-wall blade makes for quick chopping and slicing and is slightly bowed to facilitate the rocking motion needed for what this knife is made to do. It has good balance and feel, and makes an average home cook slice and dice like a Pro. The blade is thin but still ridged enough to cut and slice straight, allowing paper-thin slices. The edge is ground to a very narrow angle which allows it to be extremely sharp.
