The extremely sharp blade is perfect for disjointing meat, splitting poultry and cutting through cartilage and rib bones. There’s no more sawing or hacking at spareribs or joints to cut them.

The Wusthof cleaver has a hand-polished blade which underwent exacting calibration to be hard enough for resisting dulling, but soft enough to easily take a keen edge when sharpened or honed. The knife is thick and fairly blunt so you can strike bones without compromising its edge. While typical stamped knives are punched out like cookie in creating them, the Wusthof cleaver is cut by a laser, making it more precise and unlikely to be distorted.

With many exceptional ratings from people who used it, the Wusthof cleaver is about as good as it gets for the home kitchen. It’s well-balanced, very sharp and easily cuts through bone. While the Henckel is perfectly fine for light duty cutting, the Wusthof cleaver is the one you want for serious business. It has numerous uses from overkill smashing of garlic cloves to scraping up prepared food to place them in bowls, mixer or pan. It can separate beef or pork ribs and quarter poultry with ease. If you buy large cuts of meat, you can cut into smaller portions for extra savings. The handle is very comfortable. The finish of the Wusthof cleaver is excellent and will seem to provide long years of use and easy cleaning. It’s a good overall knife and has a slight curvature so that you can rock it back and forth for slicing or dicing.
