It’s extremely sharp to make cutting tasks easier. A cheap, dull chef’s knife is more dangerous than a good, sharp one. This knife never slips, cuts evenly and cleanly, and you never have to saw. It’s much easier to clean with no wood handle to harbor microbes, contours comfortably into the hand and holds its sharp edge more readily. The downside for the Wusthof chef’s knife is its high cost and it’s difficult to justify the expense for the regular home cook. However, for many cooks, a high-quality Wusthof is not a splurge because it’s the right tool for the job. Its largest competitor now imports some products from Spain so buying expensive knife of different brand won’t allow you to know where it’s really made from. Wusthof chef’s knife is from Germany. Period.
