Not many home cooks have a carving knife due to its limited use but those who own it were very pleased with it. Some even prefer Wusthof Carving Knife over all others because it holds its sharpened edge beautifully and it has the perfect heft and balance for the hand. It effortlessly cuts a watermelon up, and even though it’s a little short for that, it’s so sharp that it just runs right through the rind. When carving, it’s best to pinion the roast on the carving board with a straight carving fork, then slice alongside it, and use the knife tip to carve around bones and lift off the carved meat slices. On the downside, few people think that although it’s an excellent knife for carving, its uses are so few. This knife is too long, thin and the balance is just not right for chopping. Therefore, this knife is really limited to carving meats. For most cooks, this is an expensive knife for a rare job. However, it’s a great knife for carving and the carving job is done with little effort. The craftsmanship is obvious in the heavy and even feeling of the Wusthof Carving Knife.
